Black Garlic Aioli
Prep Time 3-5 minutes Serving Size 8 Tablespoons
Equipment
Mixing Bowl
0.5 c Measuring cup
measuring spoons

Combine
Start small. Mix the garlic into a tablespoon of mayo to start. Mix well, use a spoon to break up the garlic until there are no clumps.
Be patient - this could take several minutes!
Ingredients
1/2 cup mayonnaise
4 cloves Black Garlic
1/4 tsp Balsamic Vinegar
Pinch of Fresh Black Pepper
Blend
Fold into the remaining mayo until well blended.
Prep the Garlic
Peel your garlic cloves from the bottom up, the peel will come off like paper.
Mash the garlic with a knife until soft and pliable.
Pro Tip - the peels can be steeped into a lovely tea! (recipe Below)
Taste Test
Add freshly ground black pepper to taste - bonus points if using SMOKED black peppercorns!
If you would like a bit more zip add more balsamic vinegar!
Let it rest in the Fridge for a few hours for best taste sensation!


Black Garlic Peel Tea
About the Tea
Black garlic peel tea is a zero-waste herbal infusion made by steeping the papery skins of black garlic in hot water.
The resulting savory broth or tisane contains residual plant antioxidants like quercetin and beneficial organosulfur compounds extracted from the skins.
Steep
Let the mixture simmer for 5 to 10 minutes.
Properties & Uses

Flavor profile: Tastes earthy, mild, and savory rather than pungent, especially when using skins from sweet, fermented black garlic.

Sustainability: Reuses tough outer kitchen scraps that are otherwise thrown into the compost or trash.
Rinse
Wash the skins gently in a fine strainer to remove any dust or dirt.
Strain
Pour the liquid through a fine-mesh strainer into a mug.
Safety Note
Ensure the peels are completely clean and free of dirt or mold before steeping, and strain out the papery bits entirely to avoid any texture or choking risks
Simmer
Bring the water to a boil in a small pot, add the peels, and lower the heat.
Enjoy!
